Thai Prawn Curry

Feeling exotic, lets get the wok out and make a delicious curry!


Time: prep (15 minutes) cook 25-30 minutes

Serving: 2-4 people

Best with: Rice ...even on its own its that good!

Ingredients

1 -2 packet of chilli prawns (1 for two / 2 for four)

1/2 can of coconut milk

2-3 tbsp red thai curry paste

200g of peas

2 sweet potatoes

1 chili (half for curry / half for decoration)

2 spring onions

1 onion

1 garlic clove

400ml of chicken stock

Rice (enough for 2-4)
